Welcome to Borderless Cooking

Cook dishes from around the world, in the kitchen you already have.

Borderless Cooking started with a simple problem: most recipes assume you have a big kitchen, an oven and a cupboard full of special ingredients. Many of us don’t. So every recipe here is written for a small kitchen, a normal frying pan and ingredients you can find in a regular supermarket.

Each recipe tells you which ingredients you really need and which are just nice to have, with exact amounts for every step. From Spanish paella to Chinese eggplant and Portuguese egg tarts, you will find dishes from many countries, all made simple enough for a weeknight dinner.

From our recipes

A taste of the dishes we cook at home and the ones on our list to try next, from Spanish paella to Sichuan mapo tofu. Every recipe on Borderless Cooking is made in a normal home kitchen with easily accessible tools or an air fryer, and starts with a clear list of what you really need.

And there is more on the way. Soon we will show you how to roll Japanese maki sushi with a bamboo sushi mat and perfect rice from a rice cooker, fold Mexican tacos with homemade salsa, and slowly braise a French boeuf bourguignon in a heavy cast iron pot. Stay tuned, and tell us on Instagram which dish you would like to see next. In the meantime, pick a category above to find the full recipes.

Cooking tips

Good cooking is often about small tricks, not expensive gear. In our cooking tips we share what we learned in a tiny kitchen: which tools pay for themselves, which ones you can safely skip, and how to get more out of the pans you already own.

Our series “Do you really need it?” takes one popular kitchen tool at a time and tests it against what most people have at home. We started with the paella pan, and next up are the rice cooker and the bamboo sushi mat. Each article ends with a clear answer: buy it, or cook without it.
